My inspiration to make my sweet treat this week came to me days ago! I have had a craving for a delicious apple pie for the past 2 weeks! So I finally made one! And it definitely cured my craving..this pie went so fast I wish I had made two! haha! But seriously! I will definitely make this little goodie again very soon! I decided to actually make a apple crumble pie, I was curious of how the crumbles would taste versus having an upper crust! Now, I don't know about y'all but I love CRUST!!! If you have an amazing pastry recipe use it for every pie you make! I like to think the CRUST makes the pie! And a little whip cream or vanilla ice cream to go on top as well! Also, when baking this pie I used some good ol' Granny Smith green apples. In my opinion green apples are best for cobblers and pies and red apples are good for baking stewed rather there cut or whole! I just like my apples to be a little sour than sweet in a pie cause the amount of sugar and other ingredients added just give it enough of a sweet taste! But in this recipe its whatever you prefer! This recipe was a big hit and a huge success! I hope you'll try this and let me know how you like them apples?! haha! Enjoy!
Apple Crumble Pie
Ingredients:
5-6 apples peeled, cored and thinly sliced

1 teaspoon of ground cinnamon
1/2 teaspoon of ground nutmeg
Topping:
1/2 cup of all-purpose flour
1/2 cup of brown sugar
1/4 cup of butter
*Make a pastry of your choice or use a store bought pie shell!
Directions:
Preheat oven to 350. In a large bowl toss peeled sliced apples with lemon juice. Mix together white sugar, cornstarch, all-purpose flour, ground nutmeg and cinnamon. Sprinkle over apples and toss to coat. Spread apple mixture evenly into unbaked pie shell. Use your hands or pastry cutter (using your hands is more fun) and mix together all topping ingredients. Sprinkle all over apple mixture. Bake for 1 hour until golden brown!

Southern Goodness!
Howdy! So lets be real for one second, who doesn't LOVE the south?! I am so proud to be a southern girl! Don't get me wrong, I love the west and everything about it but I love my southern roots! There's nothing like warm weather, sweet tea, sand in your toes, and southern hospitality to kick off your day! Just like there's nothing like a fresh homemade peach cobbler! Now, I know its not peach season cause trust me my grandmother from peach country herself aka Clanton, Alabama would have already given me a dozen or more of some of the finest peaches I've ever put in my mouth! I couldn't help but make something, I was craving! Here's a funny story of how this particular peach cobbler went down..are you ready?.. Here we go!
Okay, I found this amazingly easy recipe and I wasn't in the mood to bake a fancy pastry, so I wanted something that was going to be quick, but good. This recipe took about 15 minutes of preparation time, but one thing that raised some worry in my mind as I prepared this dessert was the amount of self-rising flour that it called for, especially for the type of baking dish you had to put the cobbler into. So, I thought to myself if the recipe calls for it and it was a Paula Deen recipe, then it would be okay because Paula knows best, right?! Not the case! And here's why, I put this easy dish in the oven and about ten minutes later I smell something burning, I quickly check the oven to see that this flour was headed straight to heaven! I have never seen flour rise that high in my life! I knew I had to think quick so I wouldn't ruin what was left, so I put a cookie sheet underneath to stop some of the dripping and said a prayer that this cobbler would pull through! Luckily, I was in the clear and it came out well minus some of the pastry down the side, on a cookie sheet and of course in the bottom of the oven! Oh, well live and learn! At least I had some laughs out of it all! So, if you try this good ol' Paula Deen peach cobbler less is definitely better in this recipe!
Ingredients:
4 cups of peeled, sliced peaches
2 cups of sugar, divided
1/2 cup of water
8 tablespoons of butter
1 cup of self-rising flour (it actually calls for 1 1/2 cups but if you read the story above you might want to put less, your choice)
1 1/2 cups of milk
ground cinnamon
Directions:
Preheat the oven to 350.
Combine the peaches, one cup of sugar and 1/2 cup of water in saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from heat.
Put the butter in a 3 quart baking dish and place in oven to melt. Mix remaining 1 cup of sugar, flour, and milk in bowl. Pour mixture over melted butter. DO NOT STIR. Spoon peaches on top, gently pouring in syrup. Sprinkle top with ground cinnamon! Bake for 30 to 45 minutes. Also, add some whip cream or some good ol' vanilla ice cream on top to make this cobbler real gooooooood!!!
Note: Not my personal pic cause I didn't get a picture this week, oops!

Chocolate Delight!
So last week, I was contemplating a lot over what I was going to make for the week. I wasn't sure what I wanted to bake. I didn't want a pie, cake, or really even anything sweet because I honestly just wasn't in the mood to think or know of something great to make. Crazy, I know! So after doing some research through the Internet to get some ideas, I decided why am I looking to the Internet for something to bake, why don't I go over to my huge stack of cookbooks and get my inspiration from there! So that's exactly what I did! Over the holidays, I was given as a gift this cookbook inspired by the women of Rosie the Riveter who served in WW2 together. In this book they share not only their stories of serving our country and the men they tended to during those times, but their amazing recipes either passed down from family generations or what they concocted themselves.
So this one recipe, I stumbled upon was BROWNIE PUDDING! I thought this sounds interesting never heard it nor have I ever tried it, so why not make it! This recipe was super easy! And definitely something I might try again! I'll be honest I was not in love with it the first night, but the next day and even the day after that I fell in love! Along the way, I added somethings to it like cutting up strawberries and adding cool whip to give it a little kick! So if your like me and never had this vintage recipe before, give it try! Trust me it will be worth it! I want to personally thank those ladies who were apart of the American Rosie the Riveter Association for serving and dedicating their lives to help our soldiers! Thanks for your dedication and sharing some amazing recipes that I cannot wait to try!
Brownie Pudding!
Ingredients:
1 cup of all-purpose flour
2 tablespoons of cocoa
3/4 cup of sugar
2 teaspoons of baking powder
1/2 teaspoon of salt
1/2 cup of milk
2 tablespoons of vegeatable oil
3/4 cups of morsels or nuts whatever you prefer I used morsels! More chocolate the better, right?!
3/4 cup of brown sugar
1/4 cup of cocoa
1 teaspoon of vanilla
1 3/4 cups of HOT water
Directions: Sift together flour, 2 tablespoons of cocoa, salt, baking powder, and sugar together. Add and mix until smooth milk, vanilla, vegetable oil and morsels or nuts. Pour mixture into a greased 8x8 pan. Then mix together and sprinkle on top the brown sugar and 1/4 cup of cocoa. Last, pour the hot water over it all. DO NOT mix in the water! Bake at 350 for about 45 minutes until a light crust is formed on top, but don't overbake! Enjoy!!! :)
